For those who aren’t keen on the traditional, fruit filled Christmas cake (including me) here’s my recipe for a festive alternative gingerbread cake with orange cream cheese icing, candied fresh cranberries and iced gingerbread trees. Unlike a traditional fruit cake, this recipe doesn’t need to be made in advance and although there’s several steps to complete they’re surprisingly simple, considering the finished effect. The cake batter itself is one of the easiest I’ve made – just add everything in stages to the food mixer, no folding in flour to do even. Easy!
It really is a delicious cake and well worth making, you could also try adding some chopped up stem ginger to the mix too for added texture. As you can see from half demolished cake 10 minutes after we wrapped – the video crew were rather keen on this one!
